Since 1973, Dr. James Cerda of the University of Florida and his team have studied the role of citrus fruits in hman disease. Test animals were fed a high-cholesterol diet known to create atherosclerosis. They remained on the diet for 360 days and their blood cholesterol levels remained at six to 12 time the normal level. At that point, half the animals were fed a diet in which three percent of grapefruit pectin was substituted for cellulose while the other animals stayed on the original diet. After 270 more days the animals were sacrificed. Upon examination, an average of only 5.3% of the aorta surface area of those on the pectin diet was covered by atherosclerosis, compared to 13.6% of the nonpectin groups. The average coronary artery narrowing was 24% versus 45% respectively. The addition of pectin to the diet actually reversed the atherosclerosis in both the aorta and the small coronary arteries which supply the heart. This occurred by some other mechanism than reducing blood cholerterol levels. This is a study of enormous importance. We now have a natural safe and inexpensive by product of the citrus industry that can prevent and even reverse our most deadly killer. In another of Dr. Cerda's studies, two groups of animals were fed a diet containing 15% lard. One group was given three percent grapefruit pectin, the other group was not. After nearly a year, it was found that those animals on the pectin had an almost 30% drop in their cholesterol levels compared to those not on the pectin. More exciting news was found when aortas and the coronary arteries were examined. Compared to the nonpectin groups, the animals on the pectin had an 85% decrease in the amount of plaque formation on the inner surface of the aortas and an 88% decrease in the narrowing of the small coronary arteries that supply the heart! Restricted blood flow through these arteries leads to heart attacks and heart failure, and in many cases death. Dr. Cerda has shown that pectin is an effective as the anticholesterol drug cholestyramine---without any side effects.
